1.Introduction

In the Vietnamese market today there are 3 main types of premium coffee, but not everyone knows and understands this. 2.Arabica coffee
Arabica coffee strain has slightly long beans, in Vietnam there are 3 strains Bourbon, Typica, Catuai and Catimor.
The difference of Arabica lies in the way it is processed. People collect Arabica coffee berries and ferment them by soaking them in water to bloom, then wash them and dry them. Arabica coffee has a sour, slightly bitter flavor, and when brewed, it has a light brown, clear amber color. Arabica’s ingredients are low in caffeine and have a lot of aroma. Typica
Typica is the oldest coffee variety in the world, it was the first coffee strain discovered. The flavor of Typica is very popular because of its bitter and sweet taste, mixed with a sour taste.
Typica has a cone shape about 3.5 – 4m high, the main trunk grows straight, and many side trunks grow obliquely. Currently, Typica is grown the most in Cau Dat (Da Lat) with an output of about 3 tons of coffee beans/year. Because Typica’s productivity is very low, since 2001, when coffee prices in Vietnam fell extremely low, people started cutting down Typica and replacing it with coffee varieties that bring higher yields. Nowadays, getting pure Typica coffee in Vietnam is quite difficult and output is extremely limited.

Bourbon
Bourbon originates from a French island and was brought to Vietnam in 1875. This coffee variety is grown at an altitude of 1000 – 2000m and has a yield 20-30% higher than Typica, with a coffee quality that is similar to that of Typica. equivalent to Typica.
Depending on the specific strain, Bourbon coffee has different colors when ripe: yellow, orange, red, etc. This type of pure coffee contains a rich content of organic acids, has a sour taste, and a charming aroma. Catimor
Catimor is a tree variety bred in Portugal, introduced to Vietnam in 1984. Catimor is a low tree coffee variety, branches have short nodes, can be planted at high density, and the tree matures early. Catimor coffee has a strong aroma and high price, but the coffee quality is lower than other pure Arabica varieties. Catuai
Catuai is a hybrid coffee variety, introduced to Vietnam since the 1980s. This coffee variety has a dwarf stem, capable of withstanding harsh natural conditions. When ripe, Catuai coffee cherries are yellow or red in color, and the core is mainly round. Yellow berry coffee has a richer flavor than red cherries.

3.Robusta coffee
Robusta is the best coffee variety in the Central Highlands. The special thing about Robusta is that in each different soil, Robusta brings different flavors. Robusta is grown at an altitude of less than 600m, suitable for many types of terrain, so it is widely grown, accounting for ⅓ of pure coffee output consumed in the world.
Robusta coffee beans are smaller than Arabica, without needing fermentation but dried directly, so Robusta’s bitter taste dominates, making coffee lovers remember it forever.

4.Weasel Coffee

Weasel coffee is also known as Weasel COFFEE. It is called that because the flesh and outer shell of the whole coffee bean is one of the weasel’s favorite foods. Coffee beans including the kernel and the silk shell (also called endosperm) are not digested in the weasel’s stomach and are excreted intact according to the appearance of the bean, but there is a change. Not a slight change in flavor and taste compared to regular coffee beans. The silk skin of weasel coffee beans is quite red and much darker than the silk skin of regular coffee beans. Careful study of the surface of the endosperm shell shows that this emulsion shell becomes harder and more brittle.
